Tonight I’m having company for dinner. I’m going to prepare my world famous (only kidding) Eggplant Parmesan! It takes me two days to prepare it but it is so worthwhile! The secret is to soak the sliced egg plant in cold slightly salted water for one hour or until the water turns purple. That makes the bitterness go away. One of your guests will probably say oh no I don’t like eggplant, but just say to them just take one bite and if you don’t like it I’ll make you something else! 100% of the time they are the ones who wants seconds or thirds! Anyways, I’m looking forward to a great evening and just catching up on each other’s lives. It’s always good to spend time with old friends.
