Eggplant Parmesan Recipe

I have been asked to share my recipe for eggplant Parmesan! I have had people tell me they don’t like eggplant Parmesan and I tell them the same thing, take one bite and if you don’t like it I’ll prepare something else for you! Then they take one bite and, believe me, those same people ask for seconds! The secret is getting all the impurities and bitterness out of the eggplant. To do that, you soak the slices of eggplant in cold water for at least two hours. When the water turns purple it’s good to go.

I’m not giving you the correct measurements because each person makes different amounts at a time. I know all you cooks out there have common sense so you know what you need. Let me know how you like it. I guarantee you, your family and friends will love you for making something so special.

Eggplant Parmesan

3 large purple eggplant
4 eggs
I/2 cup of milk
vegetable oil
mozzarella cheese
ricotta cheese
Prego marinara sauce

Slice the eggplant into 1/2 inch slices. Soak the slices in ice cold water for about two hours or until water turns purple. (This simple step takes on the bitterness and the impurities out of the egg plant.) Drain the egg plant and pat dry, mix the eggs with the milk and dip the egg plant into the egg mixture. Next, coat eggplant with the bread crumbs. Fry the eggplant in the vegetable oil until golden brown and drain on paper towels . When finished browning, take a large square baking pan and begin to layer the ingredients. First a layer of sauce, then a layer of eggplant, then a layer of cheeses repeat until all ingredients are layered and topped with a layer of mozzarella cheese. Cover with foil and bake at 375° for one hour, remove foil and bake another 30 to 40 minutes. Remove from oven and let stand for 10 to 15 minutes. Slice into squares and serve with a salad and garlic toast and you’ve got a meal fit for a king! Of course, each oven is different and maybe you’re not making as much so just know that as long as you have the right ingredients you just prepare it the way you like it. The most important thing is to soak the egg plant until the water is purple. Don’t be in a hurry when you are preparing this. Make sure the oil is hot and fry the eggplant a beautiful golden brown. It seems like a lot of work but it’s really not. Your family is going to love it!
